Made from a mash bill of 100% non-GMO malted barley grown in California, Washington and Ireland. Barrel aged for the last 4 and a half years. .
A Bottled-in-Bond whiskey must be made by the same distiller, in the same distilling season, aged more than 4 years in oak barrels in a federally bonded warehouse and bottled at 100 proof (50% alcohol by volume.) It is a designation that speaks to artisanal quality, purity and vintage. Inaugural batch distilled in 2015. Since then it has been resting and maturing 53 gallon charred oak casks. .
Made with 250 gallon Vendome all-copper pot still. It is rich and malty with notes of dark chocolate and toasted coconut and a sweet caramel finish. At 100 proof, it has a nice level of heat and a long, lingering finish.
