2022 Commemorative Release
With Colere, we set out to chart the direct impact of barley on flavor. Each release begins to explore the thousands of new and forgotten varieties of barley whose flavor has yet to be considered. The 2nd edition is made with Talisman, a 2-row winter variety descended from the Marris Otter, and the whiskey has been matured in refill casks, meaning the barley itself is allowed to shine through.
Nose: Lemon curd, gentle woody vanilla, raspberry coulis, and citrus peels.
Palate: Brown sugar sweetness, with orange marmalade, bittersweet dark chocolate, and forest fruits.
700mL, 50% ABV.
