Product Description
Made from a mash of Malted and Unmalted Barley, Malted Rye, and Rolled Oats, this Whiskey is a mondern interpretation of a mid-1800's Irish Whiskey.
It is distilled in direct fire, copper alambic pot stills, and aged in mixed cooperage of 53 and 60 gallons.
The inspiration for this recipe was provided courtesy of a zealous British excise officer who meticulously recorded a similar Irish mash bill in 1865. That combination of grains has produced a highly aromatic, rich, viscous and vibrant spirit that provides a glimpse into what the fabled Irish whiskies of the mid 1800's might have tasted like.
