Product Description
Holyrood is the first operational whisky distillery in central Edinburgh since 1925. It sits on the edge of Holyrood Park and is housed inside a former railway shed dating back to 1831. Founded by Canadian Rob Carpenter who is also the founder of the Canadian branch of the Scotch Malt Whisky Society, he first had the idea for an Edinburgh distillery in 2013. He and his wife Kelly along with co-founder David Robertson made the dream become a reality in 2019. Holyrood was created with the intent of proving that there is a different way of producing single malt whisky and focuses on exploring new recipes using heritage malts, specialty malts, and different yeasts.
– 81.7% Scotch Pot Still Malt, 6.5% Chocolate Malt, 3.5% Highland Peated Malt, 2.9% Vienna Malt, 2.6% Caramalt, 1.4% Spring Barley, 1.4% Crystal 240 Malt

– Matured in 51.7% first & second fill Bourbon barrels, 37.9% first fill Bourbon barrels, 6.9% Oloroso Sherry butts, 3.5% Oloroso Sherry Hogsheads
Brand Tasting Notes: The nose has caramel, creamy fudge, demerara sugar, and Scottish tablet. The palate has red fruits, vanilla, cornflakes followed by biscuits, a velvety texture, mouth-watering and savory.
Holly’s Tasting Notes: Orange, peanuts, nougat, some orange cinnamon buns, fried cakes, carrot cake. The palate has pear, apple, soft vanilla, apple juice, citrus zest, earthy spice, and chai.
