Invermallie is our connoisseurs / collector’s edition. Like the flowing river Mallie, it is an ever-changing series of classic single malt expressions based on unique one-off single casks, or other special selections. With individually numbered bottles, it is sought after by those who appreciate fine whiskey.
This Invermallie special release was selected from a single ‘first-use’ Bourbon cask. This is the cleanest expression of our house style because the Bourbon has little influence, allowing the American white oak to shine through.
Nose: On the nose there is tropical fruit, oak spices, coconut, roses, peaches, crème caramel, sea breeze and barley.
Palate: The palate is creamy with tropical fruit, lychee, gooseberries, dried apricot, honey, candied orange, cocoa, and porridge oats, developing to a malty chocolate sweetness, cereal, and dry oak.
Our whisky making process was one of the last to be designed by the leading Scots whisky researcher and maturation expert, the late Dr. Jim Swan; our distillation is guided by 3rd generation Scots Master Distiller Mike Nicolson; and our whiskies are handcrafted by our Whiskymaker and native Scot, Dr. Graeme Macaloney. We use traditional alembic handcrafted copper potstills. Our barley is the finest that Canada produces, and our oakwood is carefully selected from the world’s leading cooperages and bodegas. These traditional methods and materials come together to produce great, world-award-winning whiskies for your enjoyment.
